Lasagna…a grandmother recipe

Two weeks ago I made lasagna for our Lifehouse fellowship and I tried a new recipe from a book given to me from Justin’s grandmother. The recipe I used for the lasagna was not one of her entries in the book but was from a grandmother of one of my good friends so I decided to give it a try (plus my Mother-in-law had already tried it and encouraged me to use it). I’m not a big cheese lasagna person so I loved that this allowed me to put the amount of cheese that I wanted onto it plus this had more meat than a normal store-bought lasagna!!

2 lb. ground chuck/beef
1 large onion, chopped
2 buds garlic
salt and pepper to taste
1 large can whole tomatoes, chopped
1 medium can tomato paste
4 tsp. oregano leaves
4 TB parsley flakes
2 tsp basil leaves
1 bay leaf
1 large pkg. lasagna noodles
Mozzerella cheese
Cheddar cheese
Parmesan cheese

Brown ground chuck with onion and garlic. Add tomatoes, tomato paste and spices. Cook on low heat for 2 hours. Cook lasagna noodles per box instructions. Layer noodles, meat sauce, Mozzarella cheese, Cheddar cheese and Parmesan cheese. Layer until all noodles are used. Top with cheeses and oregano leaves. Bake at 350 degrees for 30 minutes.
